 CURRY LEAF/KARIVEPAKU PODI

Hello, Welcome to my cooking world. The below described curry leaf powder is an amazing combination with hot rice, idli, dosa, uttapam. The flavors of roasted dhaniya/coriander seeds and jeera seeds/cumin seeds enhances the authentic layer of this podi/powder. The curry leaf which is commonly known as a magic ingredient for hair growth and vitamins. Curry leaves when used usually in thadka ,chutney, sambar, rasam, or any rice items enhances its flavor.

                                          
  • Coriander seeds                                  - 1tsp
  • Urad dal / Black Gram                         - 2tsp
  • Cumin / Jeera seeds                           - 1tsp
  • Dry Coconut Powder                           -1cup
  •  Red chilies                                        -4 or 5
  • Curry leaves                                       - 1cup
  • Salt                                                   - as per the taste

Procedure


Step 1: First Dry roast dhaniya / Coriander seeds.



Step 2: Then Dry roast urad dal / black gram.



Step 3: Dry roast jeera  / Cumin Seeds.




Step 4: Dry roast coconut powder.



 Step 5: Dry roast red chilies.


Step 6: Roast curry leaves in 1-2 tsp of oil.

Step 7: Roast until it turns crisp.

Step 8: Add salt and grind all the above ingredients into a fine powder.

Step9: Enjoy the powder with idli,dosa and rice.
