Brinjal coriander curry

Ingredients:

  • Brinjal                                                                                  - 2 kilos/ 1lb
  • Mustard seeds,cumin,hing,chana dal, urad dal ,turmeric     - 1 tsp each
         (For thadka)                                                
  • Coriander leaves                                                                  - 1 big bunch 
  • Green chilies                                                                        -3  to 4
  • Oil                                                                                         - 2 Tsp

Procedure:

Step 1:
Heat oil in a pan and add all the thadka ingredients.

 Step 2:
Once the mustard seeds starts slputtering, add evenly chopped bringal into the oil.

 Step 3:
Prepare the masala paste for the curry.Grind roughly chopped coriander leaves,green chillies and salt into a smooth paste.

 Step 4:
Once the brinjal is softened, then add the masala paste to it and stir well until the raw flavor of the coriander is gone.
 Step 5:
cook the curry until the raw flavor turns aromatic.Then turn off the stove.
