Gutti Vankaya / stuffed brinjal curry

Ingredients:

  • Brinjal / egg plant            - 1 dozen small sized
  • Peanuts                              - 1 cup
  • Cashews                            - 1/4 cup
  • Poppy seeds                     - 1 tsp
  • Chana dal                          - 4 tsps
  • Urad dal                            - 4 tsp
  • Onion                                - 1 large
  • Red chilies                        -4 to 5
  • Salt                                    - as per the taste

Procedure:

Step 1:
Dry roast peanuts, cashews, poppy seeds and keep it aside.



 Step 2:
Dry roast chana dal in a pan until it turns aromatic and changes its color.


 Step 3:
Dry roast urad dal until it changes it color.

 Step 4:
Roast onion with 1 tsp of oil until it changes its color.(onion is completely optional)


 Step 5:
Dry roast red chilies until it changes its color.


 Step 6:
Grind all the dry roasted ingredients into a coarse paste by adding very little water.


Step 7:
Slit the brinjal from all the 4 sides.



Step 8:
Stuff  the slit brinjal with the ground masala paste. Brush the pan with little oil and transer the stuffed brinjal to the heated pan.


 Serve it with roti or hot rice.
