Instant rava idli

Ingredients:

  • Coriander leaves                                                 - 1 bunch
  • Green chilies                                                       - 3 to 4
  • Grated carrot                                                      - 1 cup
  • Cashews chopped                                              - 1/4 cup
  • Sooji / semolina                                                 - 1 cup
  • Salt                                                                       - As per taste 
For tempering: 
  • Mustard seeds, urad dal, chana dal, hing         - 1 tsp each

Procedure:

Step 1:
Heat a tsp of oil in a pan, add all the tempering ingredients and then add finely chopped green chilies and coriander leaves.
Step 2:
Add grated carrot to it and stir fry them.


Step 3:
Add chopped cashews and fry until it changes its color.


Step 4:
Add Sooji and salt to it and stir well.


Step 5:
Once it cools down, add beaten curd and stir it well to form idli batter consistency.

Step 6:
Fill the idli concavities with the batter after brushing it with ghee. Steam it for 10-15 mins.


Serve it hot with a scoop of thick yogurt and chutney.
