Veg Dum Biryani
Ingredients:
For curry:
- Butter - 2 Tsps
- Bay leaf - 1
- Veggies(carrots, cauli flower, green peas, potatoes, beans) - 1 cup each
- Curd / yogurt - 2 cups
- Kasuri methi -1/4 tsp
- Red chili powder, garam masala, salt, Biryani masala - 1 Tsp each
- Fried onions - 1 cup
- Saffron strands - few
- Green chilies - 2 slit
- Basmathi rice - 1 cup
- Jeera seeds - 1/2 tsp
- Salt - as per the taste
- Oil - 2 tsps
- Pepper corns - few
Procedure:
Step 1:
Heat butter in a pan, add jeera seeds & bay leaf and allow it to turn aromatic.
Step 2:
Add diced vegetables( as many veggies as possible) & green chilies.
Step 3:
Add all the dry powders and fried onions to it.
Step 4:
Let the veggies cook upto 50%(half - cooked).
Step 5:
Once the veggies are slightly soft, add curd and stir well.
Step 6:
Add kasoori methi and turn off the stove.
Step 7:
Boil the water by adding salt, few drops of oil, jeera seeds & pepper corns.
Step 8:
add soaked rice and let it cook for 10 mins or until the rice can be smashed between fingers and doesn't break.
Step 9:
Now, spread a layer of rice on the curry prepared earlier.Add fried onions, kasoori methi, salt, red chili powder, biryani masala.
Another layer of curry on the layer of rice and another layer of rice an repeat the process until the complete rice and curry is spread.
Step 10:
add a thick bottom pan below the cooking pot and set the flame to the lowest point and allow it to cook for 15 minutes by closing the lid and sealing it with the wheat flour dough completely so that the steam doesn't come out of the pot.
Serve hot and enjoy with a simple raita.
